trying harder to love low carb
Aug. 22nd, 2004 12:46 pmD. and I have been on the low carb diet longer than it's been trendy, because D.'s doc prescribed it for his high triglycerides. We've both lost a good amount of weight in the past couple of years on it, but we were starting to get bored.
We've recently become aficionados of Food TV, and D. started recording Low Carb and Lovin' It (in addition to Good Eats, which we LURVE) and there were some good ideas (and some not so good ones) I decided to try out:
Jamaican Jerk Pork Loin - turns out pork is very low carb, and this is fairly simple to make. The hard part is finding jerk sauce in a bottle that is low carb (a couple at the grocery were mostly high fructose corn syrup - even if you're not worrying about carbohydrates that stuff is evil). Did manage to find one, and this is quite good. Even a half-loin still makes enough for two plus leftovers.
Little Mama's Side dish: replaced the cauliflower with broccoli because D. hates the former. This is quite good (bacon lends yummy salty-meaty flavor), but as neither of us like green olives we will probably leave them out next time. Both of us have needed to eat more green veg, so another plus - we'll be doing this one again :)
Strawberry cups - cheated and made with real sugar as Splenda tends to be pricey; also unfortunately didn't have any vanilla extract in the house so I wasn't able to whip the rest of the cream.
I'm not keen on strawberries (I know - heresy!!) and haven't tried this (yet?). D. says it is ok, but frankly the appearance is off-putting: it looks like one of those Pepto-Bismol pink 1950s parfait things :P
Overall review: I'm not especially thrilled with everything in the show (the replacement of squash for spaghetti in the Italian food show - I mean, some things just won't work!), but at least now I have ideas for some meat other than chicken.
