Tried the recipe again this morning, with a package of bacon.
Results: Bacon generates more grease (or, at least the fatter-than-I-realized package I picked up did), and I had to throw some out before adding flour and milk to be sure I ended with a reasonable amount. Good for future reference if I ever need to make this for more than just D. and I though.
Tastier, but still needed salt and pepper (pepper REALLY brings out the flavor!). A win, though I'm definitely looking for better quality bacon next time.
Side note: applesauce is good with biscuits and gravy as it provides a crisp, sweet contrast to the salty pork. However, it's hard for me to treat storebought as anything but a condiment. I still prefer only my mom's to eat on it's own (and will be trying to make her recipe at some point - IIRC the apples she uses are only available in the fall).
