Well, milk chocolate - there ya go. At least no scrummy Vosges dark chocolate was sacrificed to make such a chimera!!

There seems to be an enormous fad for "savory" chocolate concepts. I suspect it all started with the "chocolate with sea salt" thing on the one side and the "chocolate with chili" on the other side, and now the chocolatiers are going to see how far they can take us for a ride before we notice the joke.

Got scared by the first a couple of months ago ***still twitching*** The second ... just plain EEEEEWWWWWWWWWW!!! (just because you can put two flavours together doesn't mean you should)

However I must say that cookies baked with solidified bacon or chicken fat instead of butter or shortening are delish ... they don't pick up either bacon or chicken flavour (thank goodness), but have a unique chewy crispness that non-animal fats just can't achieve.

Dark Chocolate, perhaps with some chili pepper in it. Spicy, sweet, savory all at once.

(I suspect this will work because I love me some Mexican Hot Chocolate a lot. The slight peppery spice and dark chocolate fusion brings out nuances I'd never noticed before. Bacon may be too much of a good thing, but I'd love to find out.)

See, that's what makes me reserved about the bacon addition - it's too strong a flavor on it's own and I can't help but think that bacon + chocolate of ANY flavor would be nasty for this reason.

I solidly agree with you on the chili+ chocolate though - just a bit of bite on the finish is wonderful!

Out of curiosity - what makes you confident that the flavors would work together? I mean, I love bacon too, but see my comment upthread about how I think two flavors that strong and different won't work...

Hmm, it seems to be rather standard for Bay Area chocolatiers. I'd have a hard time thinking of one who doesn't include something sprinkled with sea salt. I'm fairly certain that Charles' Chocolates (the one I go past on my route to work) does. And that chocolatier at the farmers market in the Ferry Building in SF ... I'm blanking on the name .. ah, yes, Recchiuti. Those are the ones I've tasted specifically. But if you plug "chocolate sea salt" into Google, you'll find a lot more.
